Augie Peanut Butter Cookies

Elizabeth Melton of Dining Services shares a much-requested recipe for Augie Peanut Butter Cookies. First, she had to whittle down the amount of ingredients because the full batch recipe makes more than 500 cookies. This one-sixth recipe makes about 84.

INGREDIENTS:

1 c shortening
1 1/3 margarine (sticks)
1 ½ c peanut butter
2 c sugar
1 1/3 c brown sugar
3 eggs
2 t vanilla
2/3 t salt
1.5 t baking soda
4 c flour
Extra sugar for rolling
Dash of Augie Spirit

DIRECTIONS:

1. Preheat oven to 350 degrees.
2. Mix salt, baking soda and flour together, set aside.
3. In another bowl, mix together shortening, margarine, peanut butter and sugars until well blended.
4. Add eggs and vanilla and beat well.
5. Add in flour mixture and mix until well blended.
6. Form balls and roll in sugar.
7. Bake for 13 minutes.

Full Batch
(about 504 cookies)
2 ½ lb shortening
2 lb margarine
5 lb peanut butter
12 c sugar
½ gal brown sugar
18 eggs
¼ c vanilla
1 ½ T salt
3 T baking soda
1 ½ gal flour
Extra sugar for rolling
Dash of Augie Spirit
